raw bircher brownies

Are you ready for a little bit of unconventional health-inspired rocky road brownies? Everyone wants more of the good stuff and these are proudly named ‘bircher’ brownies due to their nutritious additions, including dried fruits, nuts, seeds and oats. 

Method

In a large mixing bowl, combine the wet ingredients until smooth. This includes the nut butter, coconut oil (soft at room temperature) and maple syrup.

Sieve in the raw cacao powder and combine, again ensuring the batter is lump-free.

Add the dried fruits, seeds, nuts and salt, then mix well.

Pour the mixture into a lined baking tray approx 8 x 8 inches and freeze for 4 hours before slicing into 16 treat-sized squares.

Keep in the fridge and eat within 5 days. If you want to keep these for longer, they will freeze for many weeks, so just defrost at room temperature for 20 minutes before eating.

300g smooth nut butter

180g coconut oil

120g maple syrup

120g raw cacao powder

80g pumpkin seeds

80g sunflower seeds

150g sultanas

100g dried cherries/cranberries

100g ground almonds

80g fine porridge oats

small pinch of pink Himalayan salt
